Ingredients:
2 beets
1/2 red onion
1/2 cup boiled chickpeas
3 pickled cucumbers
Greens
1 tomato
Salt
Ground black pepper
For the salad dressing:
1 teaspoon whole-grain French mustard
1/2 teaspoon Provencal herbs
3 tablespoons vegetable oil
PREPARATION:
Cut the beets, tomatoes, and pickled cucumbers into arbitrary slices.
Thinly slice the onion into half-rings.
Chop the greens finely.
Combine beets, tomatoes, onion, and cucumbers. Add chickpeas and greens.
For the salad dressing, mix French mustard with salt, pepper, Provencal herbs, and vegetable oil. Stir well.
