In this recipe, a magnificent cake with three layers is prepared using raisins, cocoa, and poppy seeds. The uniqueness lies in baking all three layers simultaneously on one baking sheet, making the cooking process quick and convenient.
Ingredients for the Dough:
2 chicken eggs
200g sour cream
180g sugar
2g vanilla sugar
1 tsp baking soda
1 tbsp 9% vinegar
0.25 tsp salt
1 tbsp cocoa powder
1 tbsp poppy seeds
2 tbsp raisins
Ingredients for the Cream:
450g sour cream (20% fat)
3 tbsp powdered sugar
0.3 tsp citric acid
Instructions:
In a deep bowl, beat eggs with sugar and a pinch of salt until obtaining a light, fluffy mass.
Add 200g of sour cream and mix until smooth.
Gradually add sifted flour and vanilla sugar, stirring the batter.
Into the finished batter, add extinguished soda, quenched with vinegar. Mix well.
Divide the dough into three parts. Add cocoa powder to one, poppy seeds to another, and raisins to the third. Mix each part.
Spread three types of dough on a baking sheet lined with parchment paper evenly.
Bake the layers in a preheated oven at 160 degrees Celsius for 15 minutes. Cool on a rack.
Cream Preparation:
Mix 450g sour cream, 3 tbsp powdered sugar, and 0.3 tsp citric acid. Do not whisk to maintain the consistency.
Assembling the Cake:
Cut the layers into rectangles.
Place the raisin layer, spread with cream.
Place the cocoa layer on top, cream side down.
Repeat the layers, finishing with the raisin layer.
Coat the sides and top of the cake with cream. Decorate with crumbs from trimmings.
Leave the cake in the refrigerator for 1-2 hours.
