Zucchini with minced meat — quick, easy, and very delicious!

Zucchinis are abundant — you can buy them everywhere and at a very reasonable price. With this vegetable, you can prepare a variety of dishes and conduct culinary experiments. Below is a very simple and light recipe for cooking zucchini.

What ingredients you’ll need:

3-4 zucchinis

One onion

350-450 g of ground chicken

One or two eggs

Salt, pepper to taste

Several tomatoes

50-80 g of breadcrumbs

50-70 g of hard cheese

Here is a very simple and light recipe for preparing zucchini.

If the zucchinis are very young, you can leave them unpeeled. If they are larger, you may need to peel them.
Slice the zucchinis into rings with a thickness of 1.5-2 cm. Use a teaspoon to remove the centers from each ring; you can also cut out the centers with a small stack.

Salt the zucchini rings, and finely chop the centers in a blender or meat grinder, adding the onion.
Add ground chicken to the chopped vegetable mixture, season with salt and pepper to taste. If the mixture is too liquid, add a little semolina and mix.

Line a baking sheet with parchment paper. Place the zucchini rings on the baking sheet and stuff them with the prepared filling.

Brush each piece with beaten egg and sprinkle with breadcrumbs. Slice the tomatoes into rounds and place them on top of the zucchinis.

Preheat the oven to 180°C and bake the zucchinis for 35 minutes.

Grate the cheese. After 35 minutes of baking, sprinkle the zucchinis with cheese and leave them in the oven for an additional 5 minutes to melt the cheese.

Serve the zucchinis hot. Before serving, you can sprinkle them with finely chopped herbs.
