The most delicious vinaigrette

Do you know why we called this vinaigrette the most delicious? Here, all the vegetables are roasted, which means the flavor of the final dish will be more intense and vibrant.


4 medium potatoes

3 medium carrots

2 medium juicy beets

Unrefined sunflower oil

2–3 pickled cucumbers

1 small sweet-sour apple

60-70 g of canned green peas

Freshly ground black pepper



Step 1

Wash all the vegetables with a brush and wrap each one individually in foil quite tightly. Place in a preheated oven at 180 °C. Bake until soft. Potatoes will be ready first (35 minutes). Then carrots (40–45 minutes). The beets need to bake for 50 minutes to 1.5 hours, depending on the variety and size. The cooked vegetables should be easily pierced with a toothpick.

Step 2

Unwrap the vegetables, rinse with cold water, and cool. Peel them.

Step 3

Cut the vegetables into equal cubes, approximately 1 cm in size.

Step 4

Before mixing the vegetables, drizzle each one separately with oil and mix.

Step 5

Peel the cucumbers, leaving the skin thin, and cut the flesh into small cubes. Peel the apple, remove the core, and cut the flesh into cubes slightly smaller than the base vegetables. Mix the cucumbers and apple with the vinaigrette, add the peas. Dress with oil. Season with salt and pepper. Serve.
