These melt-in-your-mouth pastries have been prepared for centuries. Ensaimadas («Ensaimadas») have conquered not only Spaniards but people all over the world.
We suggest baking this delicious dessert at home. For the filling, you can use apples with cinnamon, berries, or marmalade. In our recipe, we have rolls with apple jam.
You will need:
For the dough:
• Dry yeast — 1 tsp.
• Salt — 0.5 tsp.
• Sugar — ¼ cup
• Chicken egg — 1 pc.
• Vegetable oil — 2 tbsp.
• Water — 120 ml
• Flour — 300 g
For the filling:
• Butter — 100 g
• Apple jam — 150 g
• Powdered sugar — 2 tbsp.
Preparation:
Prepare the dough. In a bowl, mix sifted flour, yeast, salt, and sugar. Add warm water, vegetable oil, and egg.
Knead everything until smooth for about 10 minutes to get a soft and elastic dough that does not stick to your hands. Form it into a ball, transfer it to a bowl greased with vegetable oil, cover with plastic wrap, and leave in a warm place for 1 hour for the dough to rise.
Punch down the dough and divide it into 4 parts. Roll each of them with a rolling pin on a flat surface greased with vegetable oil into a thin layer about 25×30 cm in size.
Spread softened butter evenly over the entire surface of the ready-made layer. Along the edge of the long side, generously spread apple jam.
Cover the filling with dough and carefully roll it into a tight roll. Roll up the roll like a «snail». Do the same with the remaining dough.
Line a baking sheet with parchment paper, grease it with vegetable oil, and place the resulting «snails». Leave to rise in a warm place for 30 minutes.
Bake in a preheated oven to 180°C (350°F) for 20-25 minutes until golden brown.
Cool and sprinkle with powdered sugar.
All — delicious, airy, and aromatic rolls with juicy apple filling are ready. Serve warm with hot tea or coffee.
Bon appétit!
