Homemade Chocolate Cake
This homemade chocolate cake is moist and airy, with delicious cream and rich ganache. Although it’s not the traditional “Prague” cake recipe, it is equally tasty. Here’s how to prepare it!
Ingredients
For the batter:
– 250 ml sour cream (15% fat)
– 2 eggs
– 1 cup sugar
– 1 packet vanilla sugar
– 0.5 can sweetened condensed milk (like the kind from the Soviet era)
– 1 tsp baking soda, extinguished with vinegar
– 2 tsp cocoa powder
– 1.5 cups flour
– 5-10 tbsp cherry or strawberry syrup (mixed with a little water)
For the cream:
– 0.5 can sweetened condensed milk
– 2 tsp cocoa powder
– 1 stick of butter (about 200 g)
For the ganache:
– 100 g dark chocolate
– 2 tbsp heavy cream
Instructions
Step 1: Prepare the batter
1. Prepare the ingredients: Make sure the butter is at room temperature. The sweetened condensed milk should be of good quality, without milk fat substitutes.
2. Mix the ingredients: In a large bowl, combine the sour cream, eggs, sugar, vanilla sugar, condensed milk, baking soda, cocoa, and flour. You can use a mixer or a whisk. The batter should be thick but pourable. Adjust the amount of flour if necessary.
Step 2: Baking
3. Preheat the oven to 180°C (350°F). Grease a cake pan.
4. Pour the batter into the pan and bake for about 40 minutes. Check for doneness by inserting a toothpick in the center of the cake; it should come out clean.
Step 3: Prepare the cream
5. Make the cream: In a bowl, mix the condensed milk, cocoa, and butter. Use a mixer to achieve a smooth consistency.
Step 4: Assemble the cake
6. Cut the cooled sponge cake into 2 or 3 layers. Soak each layer with syrup to make it more moist.
7. Spread the cream on each layer of sponge cake, as well as on the sides and top of the cake.
Step 5: Prepare the ganache
8. Make the ganache: Heat the chocolate with the cream in the microwave (without boiling), then mix until smooth.
9. Pour the ganache over the cake and use a fork to create patterns if desired. Let the ganache set.
