Delicious whole chicken in a fragrant marinade

This marinade makes the chicken not only juicy, aromatic, and delicious, but also beautiful. When roasting, the skin turns a nice even brown color. The dish looks very appetizing and is perfect for a festive table. I’ll show you a simple and quick way to hide the wings to prevent them from burning during roasting.

Ingredients

1.4 kg whole chicken

6 garlic cloves

6 tbsp soy sauce

4 tbsp lemon juice

2 tbsp vegetable oil

2 tsp honey

1 tsp hot paprika (sweet ground)

1 tsp ground black pepper (no heaping)

Preparation

1. Slice the garlic cloves. If you chop it finely, it will burn during roasting and give the meat an unpleasant taste. Add honey, sweet ground paprika, and black pepper to the garlic.

2. Add lemon juice, oil, and soy sauce. Mix well.

3. Rinse the chicken and place it in a deep bowl or container. I also add a little salt, as the soy sauce doesn’t provide enough salt for me.

4. Pour the prepared marinade over the chicken. Turn it over several times in the bowl and leave it breast down. Cover and refrigerate for at least 2 hours (it can also be left overnight). Occasionally turn it over to ensure the marinade soaks into all parts.

5. Remove the chicken from the marinade and place the garlic cloves inside the cavity. To prevent the wings from burning, tuck them in. Position the chicken with the neck facing you, gently pull the first phalanges aside, twist them outward, and tuck them inside the third phalanges.

6. Place the marinated chicken on a baking sheet or in a roasting pan, tie the drumsticks together. Preheat the oven to 180°C (350°F) and roast for 1 hour and 20 minutes (for a 2 kg chicken, roast for 1 hour and 50 minutes).

7. Periodically remove the chicken from the oven and baste with the remaining marinade and fat from the bottom (the time for this is included in the total roasting time). The chicken will take on an even, beautiful color during roasting.

8. Once done, transfer the whole chicken to a serving plate and add a side dish or hot appetizer, as I did, and serve immediately. The meat turns incredibly aromatic and juicy. The chicken looks appetizing and very beautiful.
