Today we’re making juicy chicken cutlets. My family loves these cutlets a lot. And not just them. When my kids have friends over, I don’t have to think about what to feed them. I make these cutlets — the kids devour them happily. And then the parents ask for the recipe). And the recipe is quite simple. The main thing is to follow the proportions.

What we need:

Chicken breast fillet — 1 kg.

Fresh pork fat — 350 g.

Loaf of bread — 350 g.

Egg — 1 pc.

Water — 250 g.

Salt — 10 g.

Garlic — 2 cloves

Pepper to taste»

How to cook:

Break the loaf into pieces and soak it in water. Take exactly 250 g of water. This is the optimal amount. The bread will not be dry, but it will not be too liquid. I don’t cut the crust off the bread. I don’t see the point in it. We will grind the bread in a meat grinder.

And I also don’t soak the bread in milk. The cutlets do not become worse if the bread is soaked in water.2. Cut the fillet and fat into pieces convenient for the meat grinder. Grind the garlic, bread, fat, and fillet through the meat grinder.3. Add the egg, salt, and pepper. Mix thoroughly.

Form our cutlets with hands soaked in water. I like even cutlets, for me the optimal weight of the cutlet is 90 g. I weigh them. But this is not necessary at all, I’m just picky). I freeze some of the cutlets. That’s why I always have them in the freezer. From this amount of mince, I get 22 cutlets weighing 90 g each.

I fry the cutlets covered on both sides until golden brown. Then I add a little water and stew for about 5 minutes. The cutlets turn out thick, dense, and very juicy. Juicy chicken cutlets are ready.
